1 cup brown sugar
1 cup white sugar
1 cup oil
3 eggs
1 tsp vanilla
2 tsp salt
1/4 tsp baking powder
3 tsp maple flavoring
1 cup chopped walnuts
2 cups zucchini – grated – well packed
3 cups flour
1 tsp baking soda
Directions:
Directions:
In bowl beat well the brown and white sugar, oil, eggs, vanilla, salt, baking powder and maple flavoring. Add walnuts and zucchini. Mix in flour and baking soda.

Bake on greased cookie sheet with lip 325ºF - 350ºF for 20-25 minutes.
