4 Eggs, beaten
1 c. Flour
1 c. Milk
Pinch of Nutmeg
4 T. Butter

Blueberries
Powdered Sugar
Maple Syrup

Directions:
Directions:
Mix together eggs, flour, milk, and nutmeg. Melt butter in pie plate or shallow casserole in 425º oven. When butter is melted, pour in batter. Sprinkle with blueberries if desired. Bake for 20 minutes.

Pancake will be puffed when it comes out of the oven, but it will quickly deflate. Sprinkle with powdered sugar or serve with maple syrup if desired.
Also good with strawberries or raspberries, but add these after the pancake comes out of the oven.
