3/4 cup oil
3/4 cup flour
2 onions, chopped
5 Tbsp butter
4 cups sliced okra
3 cups chopped tomatoes (fresh)
2 bell peppers
3 ribs of celery
4 cloves garlic
2 quarts boiling water
2 chicken bullion cubes
1 or 2 Tbsp crushed red pepper
2 Tbsp. salt
2 bay leaves
2 tsp Worcestershire (optional)
1 tsp. all spice
1 tsp black pepper
1 tsp hot pepper sauce (optional)
meat of your choice -- cooked chicken, raw shrimp, sausage (or all)
file powder
cooked rice

Mix oil and flour in heavy saucepan & cook over low heat 30 - 40 minutes, stir frequently until roux is mahogany color. In large Dutch Oven, saute onion in butter about 5 minutes. Stir in okra & saute 3 to 5 minutes. Stir in tomato, pepper, celery. Add boiling water and simmer (hours) then add meat and continue to simmer until ready to serve.

Serve over rice and sprinkle with filet powder.
