8 oz. feta cheese, crumbled
8 oz. ricotta cheese
1/4 c. freshly grated parmesan cheese
2 eggs, lightly beaten
salt and pepper
1 tsp. fresh mint, chopped
1 - 450 g pkg. phyllo dough
1 c. butter, melted

Directions:
In a large bowl mix together feta, ricotta, parmesan, eggs, salt, pepper and fresh mint.
Put melted butter in a small disposeable paint tray.
Open phyllo dough and lay on counter. Cover with plastic wrap and a lightly dampened towel over top.
Remove one sheet and lay on a cutting board. Using the foam paint roller dipped into the butter apply a thin layer onto the dough.
Using a sharp knife cut dough into four equal strips lengthwise. Place a 1 1/2 tsp. of filling about 1 inch from the bottom of each strip. Fold bottom left corner over filling, making edges meet neatly on the right. Fold up the triangle you have just formed , continue folding the triangle up and over to the end of the strip. Press edges. Roll top with melted butter.
Place triangles on parchment paper and bake at 375º F 15 - 20 minutes. till golden.
To prepare ahead freeze in a single layer on a baking sheet, then pack into airtight containers. and freeze. Do not thaw before baking. Bake at 375º F 20 -25 minutes.
