Ingredients:  
3 1/2 to 4 lbs beef round or chunk pot roast
1 can cream of mushroom soup
1 pouch Campbell's dry onion soup mix
6 potatoes (quartered)
6 carrots (cut into 2' pieces)
2 tbsp flour

Directions:
Directions:
In a 6-qt Dutch oven (or crock pot) 2 tbsp hot oil, brown roast and spoon off fat
Stir in mushroom soup, onion soup mix and 1 cup water
Cover and let simmer for 2 hrs, turning occasionally
Add vegetables, cover and cook for 40 minutes or until roast and vegetables are fork tender
Remove roast and vegetables to platter
In a cup stir together flour and 1/4 cup water until smooth
Gradually stir into sauce
Cook until mixture boils and thickens, stirring constantly
