20 cups of popped popcorn
2 c. packed brown sugar
2 sticks of butter
1/2 c. corn syrup
1/2 tsp. salt
1/2 tsp. soda
1 c. mixed nuts or salted peanuts

Directions:
Directions:
Heat oven to 200º. Place popcorn in ungreased roasting pan and set aside.

Combine brown sugar, butter, corn syrup, and salt in 2 qt. saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a full boil (12-14 minutes). Continue cooking, stirring occasionally, until candy thermometer reaches 238º or a small amount of mixture is dropped into ice water forms a small ball.

Remove from heat, stir in baking soda. Carefully pour over the popcorn. Sprinkle nuts over the caramel mixture and stir until the popcorn and nuts are well coated.

Bake 20 minutes; then stir. Bake another 25 minutes; then remove from oven and immediately dump the caramel corn onto waxed paper. Cool completely. Break into pieces. Store in air tight container.
