3 c. potatoes, chopped
1/2 c. celery, chopped
1/2 c. carrotes, chopped
1/4 c. onion, chopped
1 c. water
1 chicken bouillion cube
1 tsp. parsley flakes
2 T flour
1 1/2 c. milk
1/2 lb. Velveeta Cheese

Cook the potatoes, don't drain. Add rest of ingredients and cook until thick. Add 1/2 lb of velveeta cheese, cut in small cubes and stir until smooth.

This was on a recipe card from Grandma Joyce. She made it during the holidays once and I liked it and then she mailed me the recipe. I have not made this and think there needs to be more water than 1 cup....
