5 T. butter
3 c. light brown sugar
5 T. flour
5 egg yolks
2 1/2 tsp. vanilla
3 3/4 c. skim milk (must be skim)

Meringue:
5 egg whites
5T. sugar
1/2 T. cream of tartar

Directions:
Directions:
In a large saucepan, cook butter and brown sugar together on low heat, slowly for a long time until it looks like a thick frosting. Put flour in medium sized bowl, pour some of the milk in slowly and stir until runny. Then add some milk to egg yolks. Beat well and set aside. Put remaining milk in small saucepan and bring to scalding hot and add to butter and sugar mixture. Then add the flour/milk mixture. Stir constantly until thick. Add the egg yolk mixture and cook for 3 minutes. Take off heat and add vanilla. Pour into 2 pie shells.

Topping:
Beat egg whites until foamy and add 5T of sugar and 1/2 T if cream of tartar. Put on pies and bake at 425º until meringue is browned. (10 minutes)
