1 c. Sugar
2 T. Butter
1 Egg
2 c. Flour
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
3/4 c. Orange Juice
1 T. Orange Rind, grated
1 c. Cranberries or Craisins, chopped
1/2 c. Pecans, chopped

Directions:
Directions:
Cream sugar, butter, and orange rind. Sift together dry ingredients and add to batter alternately with the orange juice. Mix in cranberries or Craisins (dried cranberries) and pecans.

Spoon into greased loaf pan. Bake at 350º for 50 minutes.
Bake for 40 minutes if using small loaf pans.
Can also make muffins.
