Package of soft Tortillas
1 lb. of lean ground beef (or ground chicken or sliced chicken or sliced beef)
2 tsp oil
1 onion, thinly sliced
1 red or green pepper, cut in thin strips
3 cloves of garlic, minced
2 tsp ground coriander
1/2 tsp ground cumin
crushed red pepper flakes or hot sauce
Salt
Toppings: Salsa, shredded lettuce, chopped tomato, chopped green onion, shredded carrot, shredded cheese, low fat sour cream, fresh coriander...

Directions:

Warm the tortillas in the oven (wrapped in foil) or in the microwave right before serving.
Heat the oil to medium-hgihin a large non-stick saucepan and cook the beef and onions for about 1 minute, Add the red pepper, garlic, coriander, cumin and red pepper flakes and cook until the meat is cooked through. Add a little salt if necessary.
Spoon the meat mixture onto the centre of each tortilla and add desired toppings. Fold up on three sides and enjoy!
