3 c. sugar
3/4 c. corn syrup
3/4 c. water
1/2 c. of egg white (3 eggs)
1/4 tsp. salt
1 tsp. vanilla
3/4 c. nuts

Directions:
Directions:
In a 2 quart pan, combine sugar, corn syrup and water. Cook to 262 degrees. While syrup is cooking, put eggs whites in bowl and add salt. As soon as it reaches 262 degrees F, remove from heat. Let stand a minute while beating whites. Beat whites until they cling to bowl, then pour hot syrup slowly over , beating constantly. Be careful not to add too rapidly, so white won't cook in pieces. Continue to beat 12 or 1 minutes or until candy won't flow from spoon, but rather in broken pieces. Looks dull, keeps shape when dropped from buttered spoon. Quickly beat in nuts and vanilla. Drop by tsp. onto waxed paper or pour into wax paper lined pan to form sheet 3/4 inches thick. Cut in squares when cold and firm. Wrap in waxed paper.
