Phyllo Wrapped Brie with Mushrooms Recipe

Ingredients: 1 1/2 cups sliced mushrooms 1 T butter 1 T dry sherry 1 tsp Worcestershire sauce 1/4 tsp crushed dried thyme Dash pepper 2 T fine dry bread crumbs 4 sheets Phyllo dough, thawed 3 T melted butter 1 4/12 oz round of Brie Apple or Pear wedges and crackers

Directions:Cook mushrooms in 1 T butter in a medium skillet until tender. Add sherry, Worcestershire sauce, thyme and pepper. Cook until all liquid evaporates. Remove from heat and add bread crumbs. Set aside to cool. Lightly brush 1 sheet phyllo with some of the melted butter. Repeat with all the other sheets of dough. Cut a 10 inch circle from the stack and discard the rest. Slice Brie in half and place one half on phyllo circle. Top with half the mushroom mixture and place the other Brie and top. with the rest of the mushrooms mixture. Wrap Phyllo up and over Brie, pleating the dough as needed to cover. Brush with melted butter. Place in a shallow baking pan and bake @ 400 º F for about 20 minutes or until golden. Serve at once with fruit and crackers. |

Notes: I can make these in my sleep! This is a real favorite with everyone at a cocktail party, even those who think they don't like Brie. Decorate a platter with the fruit and crackers and watch it disappear. You can make these with any size Brie-I have made them for a large event, using the large wheel of Brie, just adjust the amounts of ingredients.
