Equal Portions of the following:
• 5 lb sausage dried
• 5 lb Krakus Ham or lean canned ham
• 5 lb tuma cheese
• Hard boiled eggs (fill one gallon size Ziploc bag)
• 1 lb pecorino grated cheese
• 1 dz. raw eggs (extra large or jumbo)
• 1 cup parsley-finely chopped

Into the giant pot goes the initial quantities from the pre-measured and Ziplok-bagged portions, five pounds of diced canned ham, five pounds of sausage, diced hard-boiled eggs, parsley, diced tuma cheese (a watery tasteless cheese more glue than flavor), Picorino Romano grated cheese, and at least a dozen raw eggs to start. This may be mixed with hands or long spoons depending on the style of the mixer. Slowly, more of the batch portions are added with qualitative judgments made on density and balling. This is accomplished by grabbing a handful and squeezing it into a ball and after releasing, watching how the mess holds up.

Dough Recipe:
• 5 lb flour
• 5/8 cup of lard @room temp.
• 1/2 cup of water
• 1 dozen eggs whipped
• black pepper
• 1/2 dozen egg whites

Line pan with bottom layer of dough, fill with mixture, cap with top layer and cut steam vents. Add egg yolk wash for color.

Bake at 350, bake until golden brown. Allow to cool somewhat before cutting to keep it from falling apart.
