Giblets and neck from turkey
2 cups water (divided)
2 cups pan drippings
1/4 cup flour, salt & pepper to taste
2 hard boiled eggs sliced thin
1/2 cup chopped cooked turkey

Directions:
Directions:
Cover giblets with water, simmer until tender (about 1 hr)
Remove from heat & chop liver and gizzard and remove meat from neck.
set aside.

Add pan drippings to broth from giblets. Bring to a boil, mix flour with 1 cup water, spoon some warm broth into water/flour mixture. Then add to broth.

It might be necessary to add more flour mixture to make gravy thicken.

Add salt, pepper, eggs, chopped giblets and turkey before serving.

Makes about 5 cups.
