1/2 head of cabbage, shredded or 1 bag coleslaw mix from the produce section
1 small onion, sliced
6 T white vinegar
6 T sugar
6 T oil
1 1/2 T salt
1 t prepared mustard
1/2 t celery seed

Directions:
Directions:
In a large bowl, combine shredded cabbage and onion. Set aside. In a small saucepan, bring vinegar, salt, sugar, oil, mustard and celery seeds to a rolling boil. Remove from heat and pour over cabbage and mix thoroughly. Cover and store in refrigerator for one to several days. It will keep for several weeks.

Optional: To make creamy coleslaw, take desired amount of finished slaw and place in a colander and drain for several minutes. Add 2-3 T of mayonnaise and mix together.

This came from a cookbook my mother-in-law, Darlene Ehlers, gave me years ago and has been a family favorite ever since. Using a bag of coleslaw mix, it takes minutes to put together but yields a perfectly balanced slaw.
