1/2 C butter
1 C sugar
2 eggs
1 3/4 C flour
1/2 t EACH salt, baking soda and nutmeg
1 C finely grated raw unpeeled zucchini
1/2 chopped nuts
1 t vanilla

Directions:
Directions:
Cream together butter and sugar. Beat in eggs. Combine flour, salt, baking soda and nutmeg. Stir half the dry ingredients into the creamed mixture; then the zucchini (the batter may look curdled). Add the remaining dry ingredients, then the nuts and vanilla; mix well. Spoon into a greased 9x5-inch loaf pan. Bake at 350º oven 50-60 minutes, until a toothpick comes out dry when poked.

This recipe came from a C&H sugar box years ago and its still one of my favorites. Rather than a dark batter (due to cinnamon being added), this is a bright yellow color with beautiful specks of green from the unpeeled zucchini. It's just a very happy looking bread!!!
