2 c. all purpose flour
1 tsp. salt
2 tsp. baking soda
1 c. butter or margarine
2 c. white sugar
2 c. mashed, over-ripe bananas
4 eggs, beaten
1 c. chopped walnuts
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350ºF. Grease and flour two 9x5-inch loaf pans. Sift flour, salt, and baking soda into a large bowl. In separate bowl, cream together butter and sugar until smooth. Mix in bananas, eggs, vanilla, and walnuts until well blended. Pour wet ingredients into dry mixture and stir until just blended. Divide batter evenly between the two pans. Bake for 60-70 minutes(until knife inserted into middle comes out clean). Cool on rack. Wrap in aluminum foil and refrigerate at least 2 hours before serving. Warning: Extreme Banana Nut Bread may be habit forming!
