3 table spoons canola oil
80 g onions
20 g butter
200 ml semi-dry white wine
500 ml broth
200 ml double cream
40-60 g Monschauer Ur-senf- German Mustard
40 g Cornflour, E.g. Mondamin
1 Pinch of salt
1 Pinch of sugar
fresh ground pepper
1 Pinch of nutmeg
Fresh chives

Directions:
Directions:
Heat in a pot oil, sauté chopped onions in it, add a knob of butter and stir well. Deglaze with the white wine and fill it with the broth. Just boil and refine with cream.

Mix the soup with the blender and then bind off with cornstarch. Add salt, pepper, sugar and little nutmeg.

Now add the Monschauer mustard, stir and briefly mix with the blender. Do not cook the soup.

Before serving, decorate the mustard soup with fresh chives.

This special German Soup was discovered with our family traveling in Germany in 2013. We returned to their shop to have soup several times and finally asked for the recipe in German and then translated in English. It is fabulous with ham. 
Until today delicious mustard is made in Monschau - between old millstones. Their soup gets its spicy note through the classic Monschauer Original (Ur-Rezept) a stone ground German Mustard.
