Meatballs:
1 lb. ground beef
1 egg
1 small onion, chopped
1/3 c. Italian-flavored bread crumbs
1/4 c. milk
1 tsp. salt
1 tsp. worcestershire sauce
1/8 tsp. pepper

Sauce:
2 tbsp. olive oil
1 medium onion, sliced
2 cloves garlic, minced
1 (28 oz.) Italian-flavored crushed tomatoes
1 tsp. salt
1/2 tsp. oregano leaves
4 small zucchini, cut into 1/2" slices
1 small eggplant, cubed

1. Mix all ingredients together. Shape into 1-1/2" balls. Place on a cookie sheet and bake in preheated 400º oven for 15 to 20 minutes, or until cooked through.

2. While meatballs are baking, prepare sauce:

-In skillet, sauté onion and garlic in olive oil. Add zucchini, eggplant, and seasonings. sauté for 2 minutes or so. Add tomatoes and let simmer until vegetables are crisp-tender.

3. To serve, place meatballs in individual bowls; top with vegetables and sprinkle generously with grated Parmesan or Romano cheese.
