1 tbsp. oil
1 cup chopped onion
1 tbsp. curry powder
1/2 tsp ground ginger
6 cups frozen kernel corn
1 1/3 cups water
1 can chicken broth
1/2 tsp salt
1/4 tsp hot pepper sauce
1 can coconut milk

Directions:
Directions:
Heat oil in Dutch oven over medium heat. Add onion and sauté until softened, about 5 minutes. Add curry powder and ginger. Cook, stirring for 1 minute. Stir in corn, water, broth, salt and hot pepper sauce. Bring to a boil. Reduce heat and simmer, covered, for 5 minutes.
Puree soup in batches in a blender, filling blender no more than half full for each batch. Return soup to pan. Stir in coconut milk and heat to serving temperature. Do not boil.
