4 Tbsp olive oil
1 medium onion, very finely chopped
1 clove garlic, crushed
450 g/1 lb tomatoes, fresh or canned and chopped with their juice
salt and pepper
a few leaves of fresh basil (or dried)

Directions:
Directions:
Heat oil in a medium saucepan. Add the onion and cook over moderate heat until it is translucent; 5 to 8 minutes. Stir in the garlic and the tomatoes with their juice. Season with salt and pepper. Add the herbs. Cook for 20 to 30 minutes, gently. Puree in a food processor. To serve, gently reheat, add more seasoning if necessary and pour over cooked, drained pasta. Freezes well.
