1 c. cornmeal
1 tsp. salt
2 eggs
2 1/2 c. water

Directions:
Directions:
Mix dry ingredients together in a bowl.
Beat eggs slightly. Add to water.
Add liquids to dry ingredients and mix well. Pour onto hot, greased griddle 1/4 cup at a time. Spread thin with back of spoon. Turn when edges curl up. Cook briefly on second side.

For gluten-free, substitute 1 1/2 c. rice flour and 1/2 c. corn starch for 2 c. flour and add an egg. If using only egg white, add a little oil. One egg=3Tbsp.
