1/2 C. Honey
1/2 C. Molasses
3/4 C. Brown Sugar, packed
1 Egg
1 T. Lemon Juice
1 tsp Grated Lemon Rind
2-3/4 C. Flour
1/2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Cloves
1 tsp Allspice
1 tsp Nutmeg
1/3 C. Citron
1/3 C. Chopped Nuts

Directions:

Mix and bring to boil honey and molasses. Cool thoroughly.

Stir brown sugar, egg,lemon juice, lemon rind. Sift together and stir flour, baking soda, cinnamon, cloves, allspice, and nutmeg. Mix in citron and nuts.

Chill dough overnight. Roll a small amount at a time, keeping the rest chilled. Roll out 1/4-inch thick and cut into oblongs 1-1/2"x2-1/2". Place one inch apart on greased baking sheet. Bake at 400º about 10 minutes until , when touched lightly, no imprint remains. Cool and store in container with slices of apple to mellow, about 2 weeks.
