****Date Filling****
3/4 lb. Stoned Dates
1/2 C. Sugar
1/2 C. Water
2 T. Lemon Juice
1/4 tsp Salt

****Dough****
2-2/3 C. Flour, sifted
1/2 tsp Salt
1/2 tsp Baking Soda
1 C. Shortening
1/2 C. Sugar
1/2 C. Brown Sugar
1/2 C. Walnuts, chopped
2 Egg Yolks
2 T. Water
1 tsp Vanilla

Before preparing dough make date filling as follows:
Mix dates, sugar and water in a pan. Cook slowly 5 minutes or until mixture is thick to stir. Add lemon juice and salt. Mix and cool.

Dough
Mix flour, salt, baking soda and set aside. Cream shortening, white and brown sugar until mixture is light. Add walnuts to the mix. Add egg yolks, water and vanilla. Add dry ingredients and mix. Roll dough into an oblong, spread date filling on top and roll like a jelly roll. Cut roll in half, wrap each in waxed paper and chill. Slice and bake at 375º for about 10 minutes.
