1/4 cup brown sugar
2 tbsp salad oil
4 cloves garlic, crushed

Sufficient for 2 hens. Marinate for at least 1 hour. I usually marinate for 6 - 8 hours.
Bake at 325 for 1.5 hours or until internal temperature reaches 170.

Aunt Gladys made these for me when I was a child. I always considered her meals, and the way she served them, to be so gracious. I have often said that Mom taught me how to cook nutritiously, Dad taught me to experiment, and Gladys taught me how to serve and entertain. I remember coming to Ottawa and sleeping at her house. Meals had china and silver in a dining room with a crystal chandelier. She had collected her silver from Birks, one piece at a time. Many years later, when she had it appraised, she was stunned at its value, and decided to use it every day, rotating the place settings so it all got used.
In my house, these hens are more famously known as "f------ Cornish Hens". I served them to a male friend, who loved them. After he married, his new wife served him Cornish Hens. He said to her, "these are good but not as good as Carol's." My phone rang,a female voice said -- with no hello -- "give me the recipe for your f----- Cornish Hens."
