Swiss Steak Recipe

1 1/2 lbs. beef round steak, cut 3/4 inch thick
3 T. flour
1 tsp. salt
2 T. shortening
1 16 OZ. can tomatoes, cut up
1 small onion, sliced
1 stalk celery, sliced
1 medium bell pepper, cut into strips
1 medium carrot, thinly sliced
2 cloves garlic, crushed
1/2 tsp. Worcestershire sauce
Hot cooked rice or noodles

Cut meat into 6- serving size pieces. Combine flour and salt; Pound 2 tablespoons of the flour mixture into meat. In a 10-inch skillet brown meat on both sides in hot shortening. Drain. Add un-drained tomatoes, onion, celery, carrot, pepper, garlic and worcestershire. Cover and cook over low heat about 1 1/4 hrs. or until meat is tender.
Remove meat to a serving tray and keep warm. Skim off excess fat from tomato mixture. Combine 1/4 C. cold water and the remaining flour mixture; stir into the tomato mixture. Cook and stir until thickened and bubbly. Cook and stir 1-2 min. more. Pass with meat.

OVEN SWISS STEAK:
Prepare Swiss Steak as above, except after browning meat, transfer to a 12x71/2x2 inch baking dish. Stir remaining flour mixture into pan drippings in skillet. Stir in un-drained tomatoes, onion, celery, carrot and worcestershire. Cook and stir till thickened and bubbly. Cook and stir 1-2 min. more. Pour over meat in baking dish. Bake, uncovered in 350º oven for 1 hour 20 min. or till meat is tender. Serve with cooked rice or noodles.

CROCK POT Directions:
Prepare Swiss Steak as above except cut meat to fit an electric slow cooker. After browning meat, transfer to crock pot. Stir remaining flour into pan drippings in skillet. Stir in un-drained tomatoes, onion, celery, carrot and worcestershire. Cook and stir till thickened and bubbly; pour over meat in crock pot. Cover and cook on low setting for 8-10 hrs. Season and serve with cooked rice or noodles.
