21/ lb baby read potatoes
1/2 C heavy cream
1/2 lb unsalted butter
2 tsp kosher salt
3/4 tsp white pepper
3 garlic cloves
vegetable oil as needed

Directions:
Directions:
Place skin-on potatoes in a pot of cold water and bring to a boil, cooking until very tender
toss garlic with a small amount of oil and roast in a 300º oven until soft throughout and golden brown
heat cream with butter, salt, pepper and roasted garlic
Simmer for 15 minutes
Allow cream mixture to cool a little
Puree the garlic into the sauce with a blender or food processor
Place potatoes in large mixer and add the heavy cream mixture until smooth
The potatoes should come out creamy and a little runny
adjust seasoning to taste.
