1 med. size potato
1 box powdered sugar
1 sm. jar peanut butter (creamy or crunchy)

Directions:
Boil potato until well done. Remove peeling and mash well. Mix powdered sugar with potato until it is thick enough to roll out (takes about 1 pound of powdered sugar). Sprinkle dough board or wax paper with powdered sugar. Roll out into an oblong shape and spread with peanut butter. Be sure to spread peanut butter close to edges. Roll up like a jelly-roll. Wrap in wax paper and refrigerate until cool enough to slice (4-6 hrs).

I don't remember who gave me this recipe, but I do remember being told that is was also known as "Po Folk Candy".
