1 1/2 c. flour
3/4 c. confectioners sugar
1/4 c. coco
1 tsp. baking soda
1/2 tsp. salt
1/4 c. + 1 tsp. vegetable oil
1 Tbsp. white vinegar
1 tsp. vanilla
1 1/4 c. water
Icing sugar for dusting

Directions:
Directions:
1. Preheat oven to 350º
2. Fill muffin tin with paper timers
3. Sift together cake flour, confectioners sugar, coco, baking soda and salt
4. Mix together oil, vinegar, vanilla, and water
5. Add flour mixture and mix until smooth
6. Pour batter into paper timers
Bake for 20-25 minutes

I make vegan icing with silk milk, vegan becel vanilla syrup, and confectioners sugar. So yummy and you cannot even tell that it's vegan!
