1½ tablespoons oil
1 small chopped onion
½ teaspoon paprika
2 teaspoons flour
2 quarts water
3 cups cubed potatoes
Salt
2 bay leaves
Bratwurst (optional)

Directions:
Directions:
Slowly brown the onion and oil in a large pot. Add the paprika after the onions are browned; don't leave on the heat. Add flour to thicken. Then add the water and the cubed raw potatoes. Add a small amount of salt and the bay leaves. May add bratwurst. Boil the bratwurst first if it is fatty. Cook until the potatoes are done.

Take out the sausage and bay leaves. Mash the potato mixture with a potato masher. Make a roux with 3 tablespoons oil and 3 tablespoons flour. Stir until lightly browned. Add to the soup to thicken.
