24 tomatoes
3 cups finely chopped celery
6 cups finely chopped onion
2/3 cup pickling salt
2/3 cup sugar
2 2/3 cup vinegar
4 tbsp mustard seed
1 tsp cumin

2 chopped green peppers
8 oz tomato paste
hot peppers (personal taste)

Directions:
Directions:
Combine the first 8 ingredients in a large heavy based pot. Bring to a boil and boil for 45 min. Add the last 3 ingredients and cook for a further 10 min. Adjust for heat by adding more hot peppers or even some hot sauce. Bottle the salsa into canning jars and seal.

As the salsa cools the seal will usually close. It is suggested that the jars be immersed and boiled for 25 min in a water bath to complete the preservation. My mom used to just keep the bottles in her basement fridge because it never lasted that long anyways.
