2 cups of flour
1 cup of sugar
2 tsp baking soda
2 tsp cinnamon
1 apple, peeled, cored and grated
1/2 cup raisins
1/2 cup shredded coconut
1/2 cup pecans
1 cup of grated carrot
3 eggs
1/2 cup vegetable oil
1 stick (1/2 cup) butter melted
2 tsp vanilla extract

Preheat oven to 350. Spray mini-muffin cups with non-stick cooking spray. In a large bowl, sift the flour, sugar, baking soda, and cinnamon together.

Add apple, raisins, coconut, pecans and carrot. Mix thoroughly until mixture becomes a coarse meal.

In a medium bowl beat eggs with whisk. Add oil, butter, and vanilla and whisk to blend. Add the wet ingredients to dry ingredients and stir until just combined.

(At this point - the batter can be split in half and frozen)

Fill mini-muffin cups. Bake for 10-12 minutes. Serve warm.

NOTE: I often substitute things...i.e. 1 cup of grated zucchini for carrots or 1/2 cup of zucchini and one mashed banana etc. Make it a few times, then get creative.
