1 tsp. ----------------------------------- Butter, softened
1 1/4 cups ---------------------------- Heavy, whipping cream
1/2 cup -------------------------------- Milk
1 1/2 tsp. ----------------------------- Salt
3/4 tsp. -------------------------------- Pepper
1 clove --------------------------------- Garlic, minced
3 tbsp. --------------------------------- Parsley, finely chopped
6 medium ----------------------------- Potatoes (approx. 2 lbs.)
1 cup ----------------------------------- Onion, finely chopped
3 tbsp. --------------------------------- Flour
1/2 cup -------------------------------- Parmesan cheese, shredded
1/2 cup -------------------------------- Swiss cheese, shredded
4 slices -------------------------------- Bacon, optional

Grease a shallow 2 1/2 quart baking dish with butter; set aside. In a saucepan, combine cream, milk, salt, pepper, garlic and parsley. Cook just until bubbles begin to form around sides of pan. Remove from heat; cool for 10 minutes.

In a skillet over medium-high heat fry bacon until crisp or to desired doneness. When cooled, crumble or chop each piece.

Peel and thinly slice the potatoes, rinse, pat dry with paper towels. Layer half of the potatoes in prepared baking dish; top with half of the cream mixture, Half of the chopped onions sprinkle with half of the flour, half of the cheeses and half of the crumbled bacon. Repeat layers. Bake, uncovered, at 350º for 55 to 65 minutes or until potatoes are tender.

Let stand for 5 to 10 minutes before serving.
