2 tbsp Extra-virgin olive oil
1/2 cup Onions, diced
1/2 cup Celery, diced
1/4 cup Red pepper, diced
3 Cloves garlic, minced
15 Ripe tomatos, cored and seeded
1 cup Water
6 tbsp Gin
Plain yogurt, sour cream or creme fraiche, and fresh chives for garnish

Heat oil in a large saucepan over medium heat. Add onions, celery, red pepper and garlic; cook until onions are translucent. Add tomatoes and water and continue cooking until all ingredients are soft, about 15 minutes. Puree soup in a blender, then strain through a course sieve. Reheat and season to taste with salt and pepper. Lade into soup bowls. Gently warm gin in a small saucepan. Spoon 1 tbsp over each serving and ignite with a match. When flame dies, garnish each serving with a dollop or swirl of yogurt, sour cream or creme fraiche. Top with fresh chives.
