3 Egg Yolks

2 tsp. Salt
1/4-1/2 C. Water

Directions:
Directions:
Place the flour on a cutting board (or in a bowl); make a well in the center of the flour. Add egg yolks, egg and salt; mix thoroughly. Mix in water, 1 Tbsp. at a time, until dough is stiff, but easy to roll.
Divide dough into 4 equal parts. Roll dough out, one part at a time, into a paper-thin rectangle on a well-floured cloth-covered board (keep remaining dough covered). Loosely fold rectangle lengthwise into thirds; cut crosswise into 1/4-inch wide strips and then in 2-inch lengths. Shake out strips and place on a towel, until stiff and dry, about 2 hours.
When you are ready to cook your pasta, cook it in 3 qts. boiling salted water (1 Tbsp. Salt) until tender, 12-15 minutes; drain.
