Ingredients:  
1 ½ pound bay scallops, thawed and in large bowl.
Pour lime juice over scallops until totally covered. Refridge for 30 minutes (that is the cooking of the scallops)
Remove from fridge and pat dry.
Put in bowl w/
1 tsp oregano
¼ red onion coarsely chopped,
2 jalapenos coarsely chopped (no seeds and no ribs, just the shell)
¼ cup raisins
½ cup coconut milk

Take 2 cups coconut and toast in oven for 3-5 minutes at 350 degree. When cooled, sprinkle into above salad keeping just a little to sprinkle over top upon serving.
