1 lb. piece of boneless salmon with skin on (try to buy a piece that is uniform in thickness for even cooking)
1 quart water
1/2 cup dry white wine (optional)
1 medium yellow onion, peeled and stuck with 2 cloves (the spice, not garlic!).
2 allspice berries
3 whole peppercorns
1 bay leaf
Mustard Sauce (optional) see below

Directions:
In a wide skillet, bring the water, wine, onion, allspice, peppercorns, and bay leaf to boil. Cover, reduce heat and simmer 20 to 30 min. to develop flavours.

Bring the poaching liquid to a brisk boil and carefully lower the fish into it, skin side down. Reduce heat to a gentle simmer. Cover and simmer about 10 minutes per inch of thickness. Test with a fork for doneness. Remove from heat and let stand in the poaching liquid. Chill for later or save right away. Divide into 4 equal portions to serve and discard skin.

You can re-use the poaching liquid up to 6 times (just freeze between uses).

Mustard Sauce: Combine 2 Tbsp sweet and hot mustard (not yellow) with 1 Tbsp dijon, 1 Tbsp sugar, 1 Tbsp cider vinegar. Slowly add 5 Tbsp oil and a little salt and pepper and some dill. Not so healthy but Swedes love it!

Poaching fish is another healthy way to cook. If you don't have the whole cloves, allspice and peppercorns, just sprinkle some of the ground into the liquid so you still get the flavour (or take some from home- they last a long time if sealed properly).
