Ingredients: 4 Alaska sockeye salmon fillets (6-8 oz. each), can use other types of fish fillets 1 c. red raspberry,fig, plum OR your favorite jam, divided in half 1 Tbsp. lemon juice 2 tsp. balsamic vinegar 2 tsp. Dijon-style mustard 1 Tbsp. olive oil salt and black pepper Fresh berries for garnish, if desired

Directions:Preheat grill/coals 15 minutes to medium-high heat.put foil on the grill grates to maximize heat on the grates. You want that grill screaming hot.
Important: Brush oil on grill grates, wait a minute or 2, repeat brushing the oil on the grill grates 10 times.
Melt 1/2 c. jam in a small saucepan over low heat. on the stove. Pat dry & brush the fish fillets with oil, season with salt and pepper then brush with melted jam.
Place salmon on the well oiled grill 5” from coals. Cook 10 minutes per inch of thickness, measured at the thickest part, or until just done and center flakes with a fork. Turn halfway through cooking.
Melt remaining 1/2 c. jam in a small saucepan over low heat. Stir in lemon juice, vinegar, and mustard. Whisk in olive oil and season to taste with salt and pepper. Keep warm. Place each salmon fillet on a serving plate, drizzle with sauce, garnish with berries if desired. |
