1 Tbsp butter or margarine, unsalted
2/3 c fresh broccoli, chopped
2/3 c mushrooms, thinly sliced
1/2 c onion, chopped
3 Tbsp chicken broth, unsalted
2 eggs
1/4 c cream 15% or 18%
1/2 c milk
1/2 c grated cheddar cheese, unsalted
1 tsp basil
1/8 tsp pepper
1 pre-cooked, unsalted pie crust (9 inch) 22 cm

Directions:
Directions:
1. Melt unsalted butter or margarine in a sauce pan.
2. Add vegetables and broth.
3. Cover and cook just enough to keep vegetables crisp.
4. Uncover, increase the heat and allow the liquid to evaporate, stirring continuously.
5. Beat eggs, cream and milk until well mixed.
6. Add cheese, basil and pepper. Stir.
7. Place cooked vegetables in base of pie shell. Pour egg mixture on top.
8. Bake at 180º C. (355º F) for 40 to 45 minutes or until a knife inserted in the center comes out dry.
