3-1/2 Cups King Arthur Unbleached All-Purpose Flour
2 tsp. instant yeast
2 Tablespoons potato flour OR 1/4 Cup instant potato flakes
3 Tablespoons nonfat dry milk
2 Tablespoons sugar
1-1/2 tsp. salt
4 Tablespoons (1/4 Cup) soft butter
2/3 Cup lukewarm water
1/2 Cup lukewarm milk

2 Tablespoons melted butter to brush on top of hot buns.

Combine the dough ingredients in a large bowl, using the dough hook attachment on the mixer. If using a bread machine, set on the dough cycle.

Place the dough in a lightly greased container (8 cup or larger). Cover the container and allow to rise for 60 - 90 minutes, until it's about doubled in bulk.

Gently deflate the dough, transfer to a lightly greased work surface.

Dived the dough into 16 equal pieces (divide by half, then in halves again, etc. until you have 16 pieces.) Round each piece into a smooth ball. (Both Nancy and my wife, Sue, are still working to perfect this step and they have a very long way to go....)

Lightly grease two 8" round cake pans and space 8 buns evenly apart in each pan.

Cover the pans, and allow the buns to rise until they're crowded against each other and "quite puffy", about 60 - 90 more minutes.

Toward the end of the rising time, preheat oven to 350º.

Uncover the buns and bake for 22 - 24 minutes, until they're golden brown on top and the edges of the center bun spring back lightly.

Remove from oven, brush with melted butter, and after a few minutes, remove from pan onto a cooling rack. Best served warm.
