7 tablespoons butter
1 large Granny Smith apple - peeled, cored and chopped
1 teaspoon honey
1 teaspoon lemon juice
flour
salt and pepper - to taste
4 chicken breast halves - skinless and boneless
1 cup chicken broth
1 cup apple juice
1/2 cup cranberry juice
1/4 cup Applejack or brandy
1" piece of cinnamon stick

Directions:
Directions:
* Melt 2 tablespoons butter in a skillet over medium heat
* Add apple, honey, lemon juice
* Sauté until just tender - about 4 minutes and set aside
* Place flour in bowl, season with salt and pepper and dredge chicken in mix
* Melt 2 tablespoons butter in skillet over medium heat, add chicken and cook until golden
* Transfer to plate and keep warm
* Add broth, apple juice, cranberry juice, Applejack and cinnamon to skillet and bring to boil - scrape out browned bits
* Simmer until reduced to 2/3 cup - about 15 minutes
* Stir in apple mixture and 3 tablespoons butter, salt and pepper
* Discard cinnamon stick
* Ladle sauce over chicken
