2 cups cheese (can use white and regular cheddar)
1 stick butter, room temp
1 T pecan oil (or veg oil)
1 T sugar
1 t salt
1 1/2 c flour
1/2 t pepper
1/2 t cayenne
1 T fresh herbs (i used tarragon/basil)
1 t parsley flakes
whole pecans
1 egg, beaten for egg wash (optional)

In mixer, blend butter, cheeses, sugar, and oil until well blended. In two batches, add flour in slowly blending well. Then add salt, pepper and cayenne blending again. Stir in fresh herbs. Separate into two portions, wrap in plastic or ziplock and refrigerate at least 30 min.

Remove from fridge and roll into small balls and flatten slightly. Place a pecan half on top, brush with egg wash, and bake. (i skipped the egg wash but it does make the pecans shiny)

Bake at 375 for 10 min or until slightly browned on bottom.

If wanting to freeze, either freeze as a disk or make into shapes and freeze. Bake after sitting room temp 15 min.
You may bake all completely and freeze as well...but they taste better baked after freezing.

To make fancy, roll the edges of a few in paprika and a few in parsley, they look pretty.
