Medium pork roast
1-2 cans black beans
2 cans Rotel tomatoes and chilies
1 pkg. taco seasoning
Grated cheese

Directions:
Directions:
Cover pork roast with taco seasoning and place in crock pot. Drain and rinse black beans. Add black beans and Rotel and set crock pot to low. Simmer for 5 hours (or all day if at work or school). Serve on tortillas with cheese.

This is an easy crock pot version of pulled pork. Serve with warm tortillas and Mexican rice. There will be plenty left over to share, to eat as leftovers, or to freeze for later.
