1 can coconut milk
1 tbsp. packed brown sugar
1 tbsp. curry paste
1 lime, juiced
salt to taste

20 large scallops
2 tbsp. vegetable oil
salt to taste
1 lime, juiced
2 tbsp. fresh cilantro, chopped

Directions:
Directions:
Whisk the sauce ingredients together in a small pot and bring to a boil over medium-high heat. Reduce the heat to medium low and gently simmer the sauce until it thickens slightly, about 10 minutes. Reduce the heat to its lowest setting to keep the sauce warm until the scallops are cooked.

Heat a non-stick stovetop or electric grill to medium-high. Place the scallops, oil, salt and lime juice in a large bowl and toss to combine. Grill for one to two minutes per side, or until just cooked through. Arrange on platter and sprinkle with cilantro.
