1 cup of Bulgur (cracked wheat)
1 cup of hot water
2 medium tomatoes
6 green onions
1 medium cucumber
1 small green pepper
1 cup finely chopped parsley
½ cup finely chopped mint (can be one Tablespoon dried mint)

Dressing

1/3 cup freshly squeezed lemon
1/3 cup olive oil
1 garlic clove minced
1 teaspoon salt
1/8 teaspoon cayenne pepper

Directions:
Directions:
Soak wheat in hot water to cover for 10 minutes. Drain and squeeze as dry as possible in clean cloth. Place wheat in bowl and add tomatoes, onions, cucumber, green pepper, parsley and mint. Stir lemon juice, garlic, salt and pepper together and mix with other ingredients. Let stand about 30 minutes. Stir in oil. Serve on Romaine leaves. (This is better if you make it the day before you serve it. Flavors are well blended.)
