1 cup 35% cream
8 oz semisweet chocolate, chopped

Bring the cream to a simmer in a small pot or in the microwave. Place chocolate in a medium size bowl and pour the hot cram over it. Cover bowl with foil and let stand 5 minutes. Whisk the mixture until smooth, then cover with plastic wrap and refrigerate until cool and slightly firm, 45 - 50 minutes. Transfer to the bowl of a mixer and whip at medium until medium-stiff peaks from, about 2 minutes. Don't leave it to chill for longer than an hour before whipping or it might separate.
