2 pounds chicken wings (or 2 pounds chicken bones)
4 scallions
2 inch piece of fresh ginger

Put the chicken bones a an 8 quart pot with a cover. Add 12 cups cold water and 1 tbsp. of salt
Thinly slice 3 of the scallions (white and green parts) and add to the pot. Peel the ginger with a small knife and slice into thin rounds. Add to the pot.
Bring to a full boil. Lower the heat and cover the pot. Cook over low heat for 45 minutes. The broth should be simmering.
Remove the chicken bones with tongs and put them on a platter. Strain the soup through a fine mesh sieve and over a clean pot. Bring to a boil, lower the heat to medium, and cook for 20 minutes. If using later, chill the stock, skim the fat and reheat. Serve hot with the remaining scallions. Use the meat from the chicken wings or bones to add to the soup. Add other vegetables or rice or pasta to the soup.
