1 cup roasted pine nuts
6 boneless, skinless chicken breast halves, cut into bite sized pieces
2 T. extra-virgin olive oil
salt and white pepper, to taste
2 t. minced garlic
1/8 t. crushed red pepper
1 cup oil packed sun dried tomatoes, finely chopped
4 cups pesto
8 oz crumbled feta cheese
1 1/2 lbs. penne pasta, cooked al dente

Directions:
Directions:
Roast pine nuts til lightly browned. Season chicken with salt and pepper and sauté in olive oil until thoroughly cooked. Add pine nuts, garlic, red pepper, tomatoes, and pesto and heat. Be careful not to boil. Add feta and heat until cheese is softened. Toss with penne to coat and serve at once.
