1 medium-large white onion, diced
4 hot Italian sausages
1 can diced tomato (I use garlic and olive oil flavour)
2 cloves garlic, crushed
4 cups broth (2-beef, 1-chicken oxo, 1tbsp bovril)
2 stalks celery, diced
2 carrots, diced
1 tbsp Italian seasoning
1 large bay leaf
3 small handfulls of pasta/noodles

Directions:
Directions:
Fry whole sausage in large pot with 2 tbsp oil and 1/2-3/4 cup water until browned. Remove meat to cool, reserve fat. In same pot, fry onion, garlic, celery, and carrot. Add 1 cup of broth and de-glaze pot. Add the rest of the broth and other ingredients except pasta. Add the cooled sausage, sliced into thin rings. Simmer, covered for 2 hours. Add the noodles and cook 15 mins or until tender.

Note: may add more water to thin soup if noodles have absorbed too much liquid
