1 Tbsp olive oil
2 cups diced sweet onion
4 cloves garlic, minced
1 tsp cumin
1 tsp ground corriander
1 tsp ground ginger (powdered kind)
1/2 tsp cinnamon
1 15 oz can crushed tomatoes
2 15 oz cans chick peas, drained and rinsed
1 cup pitted dates halved or quartered
1/4 cup lemon joice
1/2 cup chopped cilantro
1 Tbsp sugar (optional)

Directions:
Directions:
Cook onion until soft.
Stir in garlic and spices towards the end of cooking onions.
Add tomatoes, chick peas and 1/4 cup water. Simmer 10 minutes.
Stir in dates and lemon juice and season with salt and pepper.
Add coriander just before serving.
Serve over rice, quinoa or couscous.
